Description
This quick cinnamon roll mug cake is fluffy, sweet, and protein-packed with cottage cheese. A warm, gooey treat ready in under 7 minutes!
Ingredients
1/4 cup cottage cheese
1 large egg
2 tbsp almond flour (or oat flour for softer texture)
1 tbsp maple syrup or honey
1/2 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp baking powder
Pinch of salt
Optional Cinnamon Swirl:
1 tsp maple syrup
1/4 tsp ground cinnamon
Optional Topping:
1 tbsp Greek yogurt or cream cheese
Sweetener of choice (for frosting)
Instructions
In a bowl or blender, combine cottage cheese, egg, almond flour, maple syrup, vanilla, cinnamon, baking powder, and salt. Blend or whisk until smooth.
Grease a microwave-safe mug and pour in the batter.
Drizzle the optional cinnamon swirl on top and swirl gently with a toothpick.
Microwave on high for 1–1½ minutes, until set and fluffy.
Let cool for 1–2 minutes.
Top with Greek yogurt or cream cheese frosting, if desired. Enjoy warm.
Notes
Use oat flour for a softer, cake-like texture.
