Ingredients
3 medium zucchini (about 4 cups), cubed
Spray olive oil
1 teaspoon Italian seasoning
Salt and pepper, to taste
2–3 tablespoons grated Parmesan cheese (optional, but recommended)
Instructions
Prep Zucchini: Wash and cube zucchini into bite-sized pieces.
Season: In a large bowl, toss zucchini with a light spray of olive oil, Italian seasoning, salt, and pepper.
Preheat Air Fryer: Set air fryer to 400°F (200°C) and preheat for a few minutes.
Cook: Add zucchini in a single layer to the air fryer basket (cook in batches if needed). Air fry for 10–12 minutes, shaking halfway through.
