Description
This almond flour apple cake is moist, naturally sweetened, and gluten-free—made with maple syrup, fresh apple, and warm vanilla in every bite.
Ingredients
2 cups finely ground almond flour
1½ tsp baking powder
½ tsp salt
¼ cup solid coconut oil or melted butter
4 large eggs
⅓ cup maple syrup (or honey)
1 tsp vanilla extract
1 medium apple, peeled and grated or finely diced
Optional: powdered sugar or sliced almonds for topping
Instructions
Preheat oven to 350 °F and grease a 9″ round cake pan lined with parchment paper.
In a large bowl, whisk almond flour, baking powder, and salt.
Add coconut oil and blend into dry mix until crumbly.
Beat in eggs, maple syrup, and vanilla extract until fully combined.
Fold in grated or diced apple.
Pour into prepared pan, smooth the top, and sprinkle sliced almonds if desired.
Bake for ~30 minutes until golden and a toothpick comes out clean.
Cool on a rack, dust with powdered sugar, and slice to serve.
Notes
Swap coconut oil with melted butter or olive oil for a richer taste.
Add a dash of cinnamon or almond extract for extra warmth.
Store at room temperature or refrigerate for longer shelf life.
