Ingredients
1 cup unsalted butter (softened)
1/2 cup brown sugar
1/2 cup granulated sugar
1 large egg
1/4 cup apple cider
1 tsp vanilla extract
2 1/4 cups all-purpose flour
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 cup diced apples
For the glaze:
1/2 cup powdered sugar
1–2 tbsp apple cider
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add in the egg, vanilla extract, and apple cider. Mix until well combined.
In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Gently fold in the diced apples using a spatula.
Scoop cookie dough onto the prepared baking sheet, spacing evenly.
Bake for 10–12 minutes or until the edges are lightly golden.
Let cookies cool on a wire rack.
In a small bowl, whisk powdered sugar and apple cider to form a glaze. Drizzle over cooled cookies.
Notes
Use tart apples like Granny Smith for the best balance of sweetness and acidity.
Chill the dough for 15–30 minutes if it feels too soft to scoop.
For more intense apple flavor, reduce the apple cider on the stovetop before adding to the dough.
Optional: Add chopped nuts or a pinch of clove for variation.
Store cookies in an airtight container for up to 3 days.
