Description

These crispy baked broccoli cheese balls are packed with veggies, cheddar, and Parmesan—perfect as a kid-friendly snack, appetizer, or side dish.


Ingredients

2 cups broccoli florets, finely chopped (about 1 small head)

1 cup breadcrumbs (plus extra for coating)

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

2 eggs, lightly beaten

1 garlic clove, minced

1 teaspoon dried Italian seasoning

½ teaspoon onion powder

¼ teaspoon salt

¼ teaspoon black pepper

Cooking spray or olive oil for brushing


Instructions

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly grease or spray.

Steam or blanch chopped broccoli for 3–4 minutes. Drain and pat dry.

In a large bowl, combine broccoli, breadcrumbs, cheeses, eggs, garlic, seasoning, onion powder, salt, and pepper. Mix well.

Scoop 2 tablespoons of mixture and roll into balls. Coat in extra breadcrumbs.

Arrange on the baking sheet and brush or spray with oil.

Bake for 15–18 minutes until golden and crispy. Cool slightly before serving.

Notes

Use mozzarella or cheese blend for different textures.

Add jalapeños for spice or quinoa for added protein.

Freeze before or after baking for meal prep.

Great with dips like marinara, ranch, or garlic yogurt sauce.
