Description

These soft and cheesy beef Meximelt tacos are packed with seasoned ground beef, melty cheese, and fresh pico—perfect for quick weeknight meals or Taco Tuesday.


Ingredients

1 lb ground beef

1 tablespoon olive oil

1 packet taco seasoning (or homemade blend)

1/4 cup water

1 cup shredded Mexican cheese blend

1 cup pico de gallo (tomato, onion, jalapeño, cilantro)

6 flour tortillas (6-inch)

Sour cream or hot sauce (optional, for serving)


Instructions

Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart.

Drain any excess fat, then add taco seasoning and water. Simmer for 3–4 minutes until thickened.

Warm tortillas in a dry skillet or microwave until soft and pliable.

Spoon beef mixture into the center of each tortilla. Top with cheese and pico de gallo.

Fold tortillas in half or roll up like burritos. For extra melty cheese, microwave each taco for 20–30 seconds.

Serve warm with sour cream or hot sauce, if desired.

Notes

For a spicier kick, add jalapeños or hot sauce to the beef or on top.

You can prepare the beef filling ahead and assemble tacos fresh when ready to serve.

Use cheddar or pepper jack for a different cheesy flavor.

Substitute with corn tortillas for a gluten-free version.
