This crispy, cheesy Blackstone quesadilla brings classic cheeseburger flavor to your griddle! Loaded with ground beef, pickles, and a tangy special sauce.
Ingredients
1 lb lean ground beef
Salt and pepper to taste
½ cup finely chopped dill pickles (plus extra for layering)
4 large burrito-size flour tortillas
2 cups sharp cheddar cheese, shredded
For the Special Sauce:
½ cup mayonnaise
¼ cup ketchup
2 tbsp minced pickles
2 tbsp minced onion
1 tsp white vinegar
Instructions
Preheat Griddle:
Heat your Blackstone griddle to medium-high (around 400°F).
Cook the Beef:
Brown the ground beef directly on the griddle, breaking it apart with a spatula. Season with salt and pepper. Cook until no longer pink, then set aside.
Make the Special Sauce:
In a small bowl, whisk together mayonnaise, ketchup, minced pickles, onion, and white vinegar.
Assemble Quesadillas:
Lay tortillas on the griddle. On half of each tortilla, spread a layer of special sauce, then top with cooked ground beef, chopped pickles, and shredded cheddar cheese.
Grill the Quesadillas:
Fold tortillas in half. Cook for 2–3 minutes per side until golden brown and crispy with melted cheese.
Slice and Serve:
Remove from griddle, cut into wedges, and serve hot.
Notes
Use freshly shredded cheese for the best melt and flavor.
Keep the sauce slightly chunky to replicate classic cheeseburger texture.
Add jalapeños or a dash of hot sauce for extra heat.
Serve with fries, salad, or dipping sauces like ranch or extra special sauce.
