Description
This savory melt layers creamy eggs, cheddar, and sausage between golden sourdough slices for the ultimate morning sandwich.
Ingredients
½ lb ground breakfast sausage
6 large eggs, beaten
4 slices sourdough bread
2 Tbsp butter, softened
4 slices cheddar cheese (or preferred melty cheese)
Salt and pepper, to taste
Optional: sliced avocado, hot sauce
Instructions
In a skillet over medium heat, cook sausage until browned; drain and set aside.
Melt 1 Tbsp butter in the same pan. Scramble eggs with salt and pepper until softly set.
Return sausage to the pan and mix with eggs; remove from heat.
Butter one side of each bread slice. On the unbuttered side, layer cheese, sausage-egg mix, more cheese, then top with another bread slice (butter side out).
Grill sandwiches in a skillet over medium-low for 3–4 minutes per side until golden and melted.
Slice and serve hot. Add avocado or hot sauce if desired.
Notes
Use fried eggs instead of scrambled for a runnier version.
Vegetarian option: use plant-based sausage or omit meat.
Add spinach, tomato, or sriracha for customization.
