Description

This creamy and cheesy cauliflower casserole is the ultimate comfort food side dish. Rich, easy to make, and always a crowd favorite.


Ingredients

1 head cauliflower, cut into florets

2 cups cheddar cheese, shredded

½ cup milk

2 tbsp butter

1 tbsp flour

¼ tsp salt

¼ tsp black pepper


Instructions

Preheat oven to 375°F (190°C).

Steam cauliflower florets until tender, about 10 minutes. Drain and set aside.

In a saucepan, melt butter over medium heat. Stir in flour to make a roux and cook for 1–2 minutes without browning.

Gradually whisk in milk and cook until sauce thickens. Add salt and pepper.

Stir in 1 cup of shredded cheddar cheese until melted and smooth.

Place steamed cauliflower into a baking dish. Pour cheese sauce over the top and sprinkle with the remaining 1 cup of cheese.

Bake for 20 minutes or until golden and bubbly on top.

Serve warm and enjoy!

Notes

Use sharp cheddar for a bolder cheese flavor.

Add a pinch of nutmeg or garlic powder for extra depth.

For a crunchy topping, add breadcrumbs mixed with melted butter before baking.
