Description

A fun twist on two classics—this cheeseburger quesadilla melt is stuffed with juicy beef, melted cheese, and grilled to crispy perfection in a tortilla.


Ingredients

1 lb ground beef

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1 tbsp ketchup (optional, for flavor)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1/4 cup diced pickles

1/4 cup diced onions (optional)

2 tbsp mayonnaise or burger sauce (optional)

Butter or oil for cooking


Instructions

Cook the Beef
In a skillet over medium heat, cook the ground beef until browned and no longer pink. Drain excess fat. Season with salt, pepper, garlic powder, onion powder, and a spoonful of ketchup if using. Mix well and remove from heat.

Assemble the Quesadillas
Lay one tortilla flat. Spread a little mayonnaise or burger sauce if using. Sprinkle a layer of cheddar and mozzarella cheese on one half of the tortilla. Add a scoop of seasoned beef, a sprinkle of pickles and onions, then another layer of cheese. Fold the tortilla in half to close.

Cook the Quesadilla
Heat a clean skillet over medium heat and lightly butter or oil it. Cook the quesadilla for 2–3 minutes per side, or until golden brown and crispy, and the cheese is melted.

Slice and Serve
Remove from skillet, let sit for a minute, then slice into wedges. Serve warm with extra pickles, burger sauce, or dipping sauce of choice.

Notes

Swap out pickles for jalapeños for a spicy twist.

Great with a side of fries or a simple green salad.

Use plant-based ground beef for a vegetarian version.

To reheat, warm in a skillet or toaster oven to keep the crisp.
