Description
Tender, juicy chicken fritters loaded with melted cheese—crispy on the outside, moist on the inside, and full of flavor.
Ingredients
1 ½ lbs boneless, skinless chicken breasts (finely chopped)
2 large eggs
½ cup shredded mozzarella cheese
½ cup shredded cheddar cheese
⅓ cup mayonnaise
¼ cup all-purpose flour (or almond flour for low-carb)
2 tbsp chopped fresh parsley (or 1 tsp dried)
2 cloves garlic, minced
1 tsp salt
½ tsp black pepper
2 tbsp olive oil (for frying)
Instructions
Chop the chicken into very small cubes or pulse briefly in a food processor.
Mix the ingredients: In a large bowl, combine chopped chicken, eggs, mozzarella, cheddar, mayonnaise, flour, parsley, garlic, salt, and pepper. Mix well until fully combined.
Heat oil in a nonstick skillet over medium heat.
Scoop the mixture (about 2–3 tablespoons per fritter) into the pan and flatten slightly with a spatula.
Cook for 3–4 minutes per side or until golden brown and cooked through. Adjust heat as needed to avoid burning.
Transfer to a plate lined with paper towels to drain.
Serve hot with your favorite dipping sauce like ranch, garlic aioli, or spicy mayo.
Notes
Make sure chicken is finely chopped for even cooking.
You can prep the mixture ahead and refrigerate for up to 8 hours before cooking.
Add a pinch of red pepper flakes for a spicy kick.
