Description

Crispy, golden zucchini bites loaded with cheese, garlic, and herbs—these veggie-packed snacks are perfect for dipping and sharing.


Ingredients

2 medium zucchinis, grated

1 cup shredded mozzarella or cheddar cheese

1/3 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 cup breadcrumbs (panko or regular)

1 large egg

Salt and pepper, to taste

Fresh parsley or chives, chopped (optional, for garnish)


Instructions

Grate zucchini and squeeze out moisture using a clean towel or cheesecloth.

In a bowl, mix zucchini with cheeses, garlic, breadcrumbs, egg, salt, and pepper.

Form mixture into 1–1.5 inch balls or patties.

For skillet method: cook bites in a non-stick skillet over medium heat with oil, 3–4 minutes per side.

For baked version: bake at 400°F (200°C) on a parchment-lined sheet for 15–20 minutes, flipping halfway.

Garnish with herbs and serve warm with dipping sauce.

Notes

Add spinach, carrots, or red pepper flakes for variation.

Use gluten-free breadcrumbs to make it gluten-free.

Marinara or ranch make excellent dips.

Air fryer works great for reheating to maintain crispiness.
