Bold taco flavor, melty cheese, and fork-tender potatoes come together in this fast, filling skillet meal everyone will crave.
Ingredients
2½ cups cubed potatoes (russet or Yukon Gold)
1 tablespoon olive oil
½ cup chopped onion
1 pound ground beef
1 packet low-sodium taco seasoning
1 can (10 oz) diced tomatoes with green chilies (undrained)
1 cup shredded cheese (cheddar or Mexican blend)
Instructions
Heat olive oil in a large skillet over medium heat.
Add cubed potatoes and chopped onions. Sauté for about 5 minutes, until onions are softened.
Add ground beef and cook until browned. Drain excess grease if needed.
Stir in taco seasoning and diced tomatoes with their juices. Mix well.
Cover and cook for 10 minutes, or until potatoes are fork-tender.
Sprinkle shredded cheese over the top and allow it to melt.
Serve hot, optionally garnished with sour cream, green onions, or jalapeños.
