Description

A fruity, boozy twist on the classic—this cherry amaretto tiramisu layers mascarpone cream, syrup-soaked ladyfingers, and juicy cherries for a no-bake showstopper.


Ingredients

2 cups fresh or frozen pitted cherries

1/4 cup sugar

2 tablespoons lemon juice

1/3 cup Amaretto liqueur

8 oz mascarpone cheese

1 cup heavy whipping cream

1/3 cup powdered sugar

1 teaspoon vanilla extract

24 ladyfinger cookies (savoiardi)

Unsweetened cocoa powder, for dusting

Optional: shaved dark chocolate and extra cherries for garnish


Instructions

In a saucepan, cook cherries with sugar and lemon juice over medium heat for 8–10 minutes, until softened.

Remove from heat, stir in Amaretto, and let the mixture cool completely.

Whip the heavy cream until soft peaks form and set aside.

In a separate bowl, beat mascarpone with powdered sugar and vanilla until smooth.

Gently fold the whipped cream into the mascarpone mixture until fully combined.

Quickly dip ladyfingers in the cooled cherry-Amaretto syrup and arrange in a single layer in a serving dish.

Spread half the mascarpone cream over the ladyfingers, then spoon a generous layer of cherries with syrup on top.

Repeat with remaining ladyfingers, cream, and cherries.

Cover and chill for at least 4 hours, preferably overnight.

Before serving, dust with cocoa powder and garnish with chocolate shavings and cherries.

Notes

Substitute Amaretto with almond extract and cherry juice for an alcohol-free version.

Add chopped toasted almonds to the mascarpone layer for texture.

For a deeper cherry flavor, add kirsch (cherry liqueur) to the cherry mixture.

Serve in parfait glasses for individual portions.

Best enjoyed chilled — no reheating necessary.
