Description
Soft, chewy, and packed with melty chocolate chips and hearty oats, these easy bars are the perfect dessert or lunchbox treat made in one pan.
Ingredients
2 cups rolled oats
1 cup all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, softened
½ cup brown sugar, packed
½ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup chocolate chips
Instructions
Preheat oven to 350°F (175°C). Grease or line a 9×9-inch baking pan with parchment paper.
In a medium bowl, combine rolled oats, flour, baking soda, and salt. Mix well; set aside.
In a large bowl, beat the softened butter with both sugars until creamy and smooth.
Add the egg and vanilla extract, mixing until fully incorporated.
Gradually stir in the oat mixture until just combined.
Fold in chocolate chips until evenly distributed.
Spread the batter evenly in the prepared baking pan.
Bake for 20–25 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Cut into squares and serve.
Notes
For a nutty variation, mix in ½ cup chopped walnuts or pecans.
Substitute chocolate chips with raisins, dried cranberries, or white chocolate for a twist.
Store bars in an airtight container at room temperature for up to 4 days.
