Description
Soft, protein-packed, and naturally sweetened, these breakfast bars combine cottage cheese, oats, banana, and chocolate chips for a wholesome grab-and-go morning treat.
Ingredients
2 ripe bananas, mashed
¾ cup cottage cheese
2 large eggs
1 teaspoon vanilla extract
2 tablespoons honey (optional)
1½ cups rolled oats
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
½ cup chocolate chips
Instructions
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
In a large bowl, mash the bananas until smooth. Add cottage cheese, eggs, vanilla, and honey. Mix well.
In a separate bowl, stir together oats, baking soda, cinnamon, and salt.
Combine dry ingredients with the banana mixture, stirring just until incorporated.
Fold in the chocolate chips evenly.
Spread the batter in the prepared pan.
Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack. Slice into bars when completely cooled.
Notes
Add ¼ cup chopped nuts or ½ cup berries for extra flavor and texture.
For a gluten-free version, use certified gluten-free oats.
For vegan bars, substitute flax eggs and plant-based cottage cheese.
