Description

These protein-packed bites combine sweet apples, warm cinnamon, and creamy cottage cheese for a healthy snack or breakfast.


Ingredients

1 cup cottage cheese (full-fat or low-fat)

1 large egg

1/2 cup rolled oats

1 tablespoon maple syrup or honey (optional, for sweetness)

1/2 teaspoon ground cinnamon

1/4 teaspoon vanilla extract

1/2 teaspoon baking powder

1 medium apple, peeled and finely diced

Pinch of salt

Optional: raisins, chopped walnuts, or a sprinkle of brown sugar on top


Instructions

Preheat oven to 350°F (175°C). Lightly grease or line a mini muffin tin.

Blend cottage cheese, egg, oats, maple syrup, cinnamon, vanilla, baking powder, and salt in a food processor or blender until mostly smooth.

Fold in the finely chopped apple and any optional add-ins.

Spoon the batter evenly into prepared mini muffin cups, filling each about ¾ full.

Bake for 18–22 minutes or until the tops are set and edges are lightly golden.

Cool slightly before removing from the tin. Enjoy warm or chilled!

Notes

Use silicone molds for easy release.

Store in the fridge for up to 4 days, or freeze for up to 1 month.

Great for baby-led weaning (omit sweetener for babies).

For extra protein, add 1 tablespoon of chia or flax seeds.
