Description
These protein-packed pancake bites are soft, fluffy, and bursting with warm cinnamon-apple flavor—perfect for meal prep, quick breakfasts, or healthy snacking!
Ingredients
½ cup (120g) cottage cheese
1 egg
1 small apple, peeled and finely chopped
¼ cup oat flour (or almond flour for low carb)
½ teaspoon baking powder
½ teaspoon ground cinnamon
1–2 teaspoons maple syrup or honey (optional, for sweetness)
Pinch of salt
Instructions
Air Fryer Method:
Preheat air fryer to 325°F (165°C).
In a mixing bowl, combine cottage cheese, egg, flour, baking powder, cinnamon, sweetener (if using), and salt. Mix until smooth.
Fold in chopped apple.
Scoop batter into greased silicone mini muffin molds or parchment-lined ramekins.
Air fry for 8–10 minutes, or until golden and cooked through. Let cool slightly before removing.
Oven Method:
Preheat oven to 350°F (175°C).
Mix ingredients as above.
Divide batter into greased mini muffin tin.
Bake for 15–18 minutes, or until golden and a toothpick comes out clean.
Notes
These can be stored in the fridge for up to 4 days or frozen for up to 1 month.
Great with a drizzle of almond butter, yogurt, or extra maple syrup on top.
Swap apple for pear or banana for a fun twist.
Use almond flour to keep it gluten-free and lower carb.
