Description

These soft and chewy coffee crinkle cookies are infused with cinnamon and a touch of brewed coffee—perfect for cozy treats or holiday baking.


Ingredients

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup brown sugar

1 large egg

2 tablespoons brewed coffee, cooled

1 teaspoon vanilla extract

1/4 cup granulated sugar (for rolling)


Instructions

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.

In a large bowl, cream butter and brown sugar until light and fluffy (2–3 minutes).

Beat in egg, then mix in brewed coffee and vanilla extract.

Gradually stir in dry ingredients until just combined.

Roll dough into 1-inch balls and coat in granulated sugar.

Place on prepared sheet, spacing 2 inches apart.

Bake 8–10 minutes until edges are set and centers are soft.

Cool on sheet briefly, then transfer to a wire rack.

Notes

Add nutmeg or cardamom for deeper spice.

Mix in dark chocolate chips for a decadent twist.

Substitute brown sugar with coconut sugar if desired.

Use instant coffee if brewed is unavailable.
