Ingredients
1 baguette, sliced into ½‑inch rounds
2 tbsp olive oil (plus extra for drizzling)
2 cups diced ripe tomatoes
2 cloves garlic, minced
¼ cup fresh basil leaves, chopped
1 tbsp balsamic vinegar (optional)
Salt and freshly ground black pepper, to taste
Instructions
Preheat oven to 400 °F (200 °C). Arrange baguette slices on a baking sheet and brush lightly with olive oil.
Toast in the oven for 6–8 minutes, until golden and crisp.
Meanwhile, combine diced tomatoes, minced garlic, basil, balsamic (if using), salt, and pepper in a bowl. Let sit for 10–15 minutes to allow flavors to meld.
Spoon the tomato mixture atop each toasted baguette slice just before serving.
Drizzle with a little more olive oil and serve immediately while the bread is still crisp.
