Blended cottage cheese and melted dark chocolate make this smooth, protein-packed fudge an easy, guilt-free treat with zero baking required.
Ingredients
1 cup whole milk cottage cheese
1 cup dark chocolate chips
1 teaspoon vanilla extract
1 teaspoon coconut oil (optional, for smoother melting)
Instructions
In a food processor or blender, blend the cottage cheese until smooth and creamy.
In a microwave-safe bowl, melt the dark chocolate chips with coconut oil in 30-second intervals, stirring in between, until smooth.
Add the melted chocolate and vanilla extract to the blended cottage cheese. Blend again until fully combined.
Line a small square or rectangular pan with parchment paper, leaving overhang for easy removal.
Pour the fudge mixture into the pan and smooth it out evenly with a spatula.
Refrigerate for 2–3 hours until firm.
Once set, lift out using parchment and cut into squares. Enjoy!
Notes
For a minty twist, add 1 drop of peppermint extract.
Stir in chopped nuts, dried fruits, or a pinch of cinnamon or chili powder for variation.
Swap chocolate chips with cocoa powder (with added sweetener and coconut oil) if needed.
