These hearty cowboy cookies are packed with rolled oats, semisweet chocolate chips, shredded coconut, and crunchy nuts. Perfectly chewy and full of flavor, they’re a satisfying treat for any occasion!
Ingredients
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 cup packed light brown sugar
2 large eggs
2 teaspoons vanilla extract
2 ¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
2 cups old-fashioned rolled oats
1 cup semisweet chocolate chips
1 cup shredded coconut
1 cup chopped nuts (walnuts or pecans)
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Cream butter and sugars until fluffy (3–4 minutes).
Add eggs one at a time, then vanilla.
In a separate bowl, whisk flour, baking soda, baking powder, and salt.
Gradually mix dry ingredients into wet until combined.
Stir in oats, chocolate chips, coconut, and nuts.
Drop tablespoon-sized dough portions on baking sheets, spaced 2 inches apart.
Bake for 10–12 minutes until edges are golden and centers soft.
Cool on sheets before transferring to wire racks.
Notes
Add dried fruit like raisins or cranberries for extra flavor.
Use dark or milk chocolate chips for variety.
Slightly underbake for extra chewy cookies.
