Ingredients
1/2 cup unsalted butter, softened
4 oz cream cheese, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 3/4 cups all-purpose gluten free flour blend (or regular flour)
1 tsp baking powder
1/4 tsp salt
Powdered sugar, for dusting (optional)
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, beat butter, cream cheese, and sugar until light and fluffy, about 2–3 minutes.
Mix in egg and vanilla extract until well combined.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually add dry ingredients to wet ingredients, mixing until a soft dough forms.
Scoop tablespoon-sized portions of dough, roll into balls, and place 2 inches apart on the baking sheet.
Bake for 10–12 minutes, until edges are set but centers are still soft.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Dust with powdered sugar before serving, if desired.
Notes
For flavored variations, add lemon zest, almond extract, or mini chocolate chips.
Store in an airtight container at room temperature for up to 5 days.
Dough can be chilled for up to 24 hours before baking for a slightly puffier cookie.
