Description

This rich and creamy pasta is loaded with shredded chicken, crispy bacon, ranch seasoning, and melty cheese—pure comfort food.


Ingredients

8 oz pasta (penne, rotini, or shells)

1 tbsp olive oil

1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces

1 packet (1 oz) ranch seasoning mix

Salt and black pepper, to taste

4 oz cream cheese, softened and cubed

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

1 ½ cups milk or half-and-half

½ cup cooked and crumbled bacon

2 green onions, sliced (optional, for garnish)


Instructions

Cook pasta according to package directions. Drain and set aside.

In a large skillet, heat olive oil over medium-high heat. Add chicken, season with salt, pepper, and ranch seasoning. Cook until browned and cooked through, about 5–6 minutes.

Lower the heat and add cream cheese. Stir until melted and creamy.

Add milk or half-and-half and stir until smooth.

Stir in cheddar and Parmesan until melted.

Add cooked pasta and bacon, stirring until everything is coated in the creamy sauce.

Simmer for 2–3 minutes to let flavors meld.

Garnish with green onions and serve warm.

Notes

For extra heat, stir in a pinch of red pepper flakes or diced jalapeños.

You can use rotisserie chicken to save time.

Add steamed broccoli or spinach for extra veggies.

Store leftovers in the fridge for up to 3 days—add a splash of milk when reheating.
