Description

This creamy garlic shrimp over mashed potatoes is rich, buttery, and full of flavor—a comforting seafood dinner that feels gourmet and satisfying.

Ingredients

For the Creamy Garlic Shrimp:

1 lb large shrimp, peeled and deveined

1 tbsp olive oil

3 tbsp butter

45 garlic cloves, minced

½ tsp red pepper flakes (optional)

½ cup dry white wine or chicken broth

1 cup heavy cream

½ cup grated Parmesan cheese

1 tbsp lemon juice

Salt and black pepper, to taste

2 tbsp chopped fresh parsley (for garnish)

For the Mashed Potatoes:

2 lbs Yukon Gold or Russet potatoes, peeled and cubed

½ cup milk or cream (warmed)

4 tbsp butter

Salt and pepper, to taste

Instructions

Make the Mashed Potatoes:

In a large pot, boil potatoes in salted water until fork-tender, about 15–20 minutes.

Drain and return to the pot. Add butter and warm milk/cream. Mash until smooth and creamy. Season with salt and pepper to taste. Cover and keep warm.

Cook the Shrimp:
3. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add shrimp, season with salt and pepper, and cook 1–2 minutes per side until pink and just cooked through. Remove and set aside.
4. In the same pan, reduce heat to medium and add remaining butter and garlic. Sauté for 30 seconds until fragrant.
5. Pour in white wine (or broth) and simmer for 2 minutes. Stir in heavy cream and Parmesan. Cook until sauce thickens slightly, about 3–5 minutes.
6. Add lemon juice, red pepper flakes, and cooked shrimp back to the skillet. Simmer for 2 more minutes, spooning sauce over shrimp.
7. Taste and adjust seasoning.

To Serve:
8. Spoon mashed potatoes onto plates or bowls. Top with creamy garlic shrimp and a generous drizzle of sauce. Garnish with chopped parsley and a lemon wedge if desired.

Notes

Add spinach or sun-dried tomatoes for extra flavor and color.

Swap shrimp with scallops or chicken if preferred.

Use half-and-half instead of heavy cream for a lighter sauce.

For extra indulgence, mix cream cheese into the mashed potatoes.
