These rich and tangy lemon squares feature a luscious lemon filling and buttery graham cracker crust – a simple, classic dessert for any occasion.
Ingredients
For the Lemon Filling:
1 can (14 ounces) sweetened condensed milk
2 egg yolks
½ cup fresh lemon juice
For the Graham Cracker Crust:
1½ cups graham cracker crumbs
¼ cup sugar
4 tbsp butter, melted and cooled
Instructions
Preheat Oven:
Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easier removal.
Make the Crust:
In a bowl, mix graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.
Press & Bake Crust:
Firmly press the crust mixture into the prepared pan to form an even layer. Bake for 10 minutes, or until lightly golden. Remove and let cool for 30 minutes.
Prepare the Filling:
In a clean bowl, whisk together egg yolks and sweetened condensed milk. Gradually stir in fresh lemon juice until the mixture is smooth and creamy.
Assemble & Bake:
Pour the lemon filling over the cooled crust. Bake for another 15 minutes, until the center is set.
Cool & Chill:
Remove from oven and let cool at room temperature for 1 hour. Then refrigerate until fully chilled and firm.
Serve:
Cut into squares and serve. Garnish with whipped cream, powdered sugar, or fresh berries if desired.
Notes
Storage: Store leftovers in an airtight container in the refrigerator for up to 5 days.
