Ingredients

For the Salmon:

4 salmon fillets (about 6 oz each), skin removed

For the Topping:

1/2 cup panko breadcrumbs

1/3 cup grated Parmesan cheese

2 tablespoons fresh parsley, finely chopped (plus extra for garnish)

1 tablespoon fresh dill or 1 teaspoon dried dill (optional)

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon lemon zest

Salt and pepper, to taste

Instructions

Preheat the Oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Topping: In a bowl, mix panko breadcrumbs, Parmesan cheese, parsley, dill, garlic, lemon zest, salt, and pepper.

Add Olive Oil: Drizzle olive oil over the breadcrumb mixture and stir until evenly coated.

Prepare the Salmon: Pat salmon fillets dry with paper towels. Place on the prepared baking sheet.

Apply the Topping: Press the breadcrumb mixture firmly onto the top of each salmon fillet, creating an even crust.

Bake the Salmon: Bake for 12–15 minutes, until the salmon flakes easily with a fork and the topping is golden brown and crisp.

Notes

For Extra Crispiness: Make sure salmon is fully dry before topping. The olive oil helps brown the crust perfectly.

Substitutions: Use Pecorino Romano or vegan cheese instead of Parmesan. Gluten-free breadcrumbs work well, too.
