Description

These light and refreshing wraps are packed with protein-rich cottage cheese, crisp cucumber, and herbs. Perfect for quick lunches, snacks, or healthy meal prep.


Ingredients

4 large flour tortillas or spinach wraps

1 cup (250 g) cottage cheese (small curd preferred)

1 medium cucumber, thinly sliced or julienned

1/4 cup (40 g) finely chopped red bell pepper (optional)

1/4 cup (15 g) chopped fresh dill or parsley

Salt and pepper to taste

1 tablespoon (15 ml) lemon juice or white vinegar

1/2 teaspoon (2 g) garlic powder or 1 garlic clove, minced (optional)

Optional Add-ins:

Baby spinach

Shredded carrots

Sliced avocado


Instructions

In a medium bowl, combine cottage cheese, chopped herbs, lemon juice, garlic (if using), salt, and pepper. Mix until well blended.

Lay the tortillas or spinach wraps on a clean surface.

Evenly spread the cottage cheese mixture onto each wrap.

Add cucumber slices and any optional fillings to the center of each wrap.

Roll wraps tightly, folding in the sides as you go.

Slice in half and serve immediately, or wrap in plastic wrap for later.

Notes

For extra crunch, use julienned cucumbers and bell peppers.

These wraps are perfect for meal prep — store in the fridge for up to 24 hours.
