Description

This feta cucumber salad is crisp, cool, and loaded with fresh herbs. Tossed in a lemony vinaigrette, it’s a refreshing Mediterranean side perfect for summer meals.


Ingredients

2 large cucumbers, thinly sliced

1 cup feta cheese, crumbled

1/4 cup red onion, thinly sliced

1/4 cup fresh dill, chopped

2 tbsp fresh mint, chopped

3 tbsp olive oil

2 tbsp lemon juice (freshly squeezed)

1 tsp red wine vinegar

1 clove garlic, minced

Salt and pepper, to taste


Instructions

Place sliced cucumbers in a large bowl.

Add feta, red onion, dill, and mint over the cucumbers.

In a small bowl, whisk olive oil, lemon juice, vinegar, garlic, salt, and pepper.

Pour dressing over the salad and toss gently to combine.

Let sit for 10 minutes before serving to meld flavors. Garnish with extra herbs if desired.

Notes

Add cherry tomatoes or avocado for variety.

Sprinkle pita chips or za’atar on top for crunch.

Best served cold and enjoyed fresh.
