Description
Crushed nacho cheese Doritos, creamy chicken filling, and melted cheese make this Tex-Mex-inspired casserole an easy comfort food favorite.
Ingredients
Cooking spray
1 (14.5 oz) bag nacho cheese-flavored Doritos, crushed
3 cups cooked chicken, chopped
2 cups shredded Mexican cheese blend, divided
1½ cups salsa
1 (15.25 oz) can corn, drained
1 (10.5 oz) can condensed cream of mushroom soup
1 (10.5 oz) can condensed cream of chicken soup
8 oz sour cream
Instructions
Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray.
Spread crushed Doritos evenly in the bottom of the baking dish.
In a large mixing bowl, combine chopped chicken, 1 cup cheese, salsa, corn, both soups, and sour cream. Mix until fully blended.
Spoon the chicken mixture evenly over the crushed chips.
Bake for 20 minutes, then sprinkle remaining cheese on top.
Return to oven and bake an additional 5 minutes, or until cheese is melted and bubbling.
Let cool slightly before serving.
