Description

These fluffy, herby drop dumplings are the perfect topper for any soup or stew. Easy to make in one bowl and simmered right in the pot for cozy comfort.


Ingredients

2 cups all-purpose or whole wheat flour

2 teaspoons baking powder

1 teaspoon salt

1 teaspoon Italian seasoning

1 tablespoon chopped fresh parsley (or 1 teaspoon dried)

¾ teaspoon garlic powder

1 cup milk

4 tablespoons canola oil or melted butter


Instructions

In a medium bowl, whisk together the flour, baking powder, salt, Italian seasoning, parsley, and garlic powder.

Add milk and oil, stirring gently until just combined. Do not overmix.

Drop heaping tablespoons of dough directly onto the surface of gently simmering soup or stew.

Cover the pot tightly with a lid and simmer for 10–12 minutes. Do not lift the lid while simmering.

To check doneness, cut a dumpling in half—it should be fluffy and fully cooked inside.

Serve hot in your favorite soup or casserole.

Notes

These dumplings work best in a soup that’s already simmering gently.

For more flavor, try adding grated Parmesan or a pinch of chili flakes to the batter.

Use whole wheat flour for extra fiber or a rustic texture.

Pairs well with creamy soups, brothy stews, or slow-cooked casseroles.

Best served fresh, but can be stored in the soup and reheated gently the next day.
