This cozy chicken cobbler casserole layers rotisserie chicken, veggies, and a fluffy biscuit-style topping for the ultimate comfort food dinner with zero fuss.


Ingredients

2 cups cooked rotisserie chicken, shredded

1½ cups frozen mixed vegetables (peas, carrots, corn)

½ cup (1 stick) butter, melted

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

1 cup milk

1 (10.5 oz) can cream of chicken soup

1½ cups chicken broth

½ teaspoon garlic powder

½ teaspoon black pepper


Instructions

Preheat oven to 375°F (190°C). Pour melted butter into a 9×13-inch baking dish.

Layer shredded chicken and frozen vegetables evenly over the butter—do not stir.

In a bowl, whisk flour, baking powder, salt, and milk until smooth. Pour gently over chicken and vegetables—do not stir.

In another bowl, whisk cream of chicken soup, chicken broth, garlic powder, and black pepper. Pour evenly over the batter—do not stir.

Bake uncovered for 45–50 minutes, until top is golden and cooked through.

Let cool 5–10 minutes before serving.

Notes

For added flavor, sprinkle shredded cheddar cheese on top before baking.

Substitute cream of mushroom or cream of celery soup if needed.

Customize the vegetable mix or add hot sauce for a kick.
