Soft, chewy, and full of Biscoff flavor—these Easy Cookie Butter Cookies are the perfect sweet treat for cookie lovers and beginners alike.
Ingredients
1 ¼ cup all-purpose flour, spooned and leveled
1 tsp allspice
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter, softened
3/4 cup light brown sugar, packed
1/4 cup granulated white sugar
2 egg yolks, at room temperature
2 tsp vanilla extract
1/2 cup (120g) Biscoff cookie butter
12 Biscoff cookies
Instructions
Preheat oven to 350°F and line two baking sheets with parchment paper.
In a small bowl, whisk together the flour, allspice, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat butter, brown sugar, and white sugar on high until light and fluffy (about 3 minutes).
Add egg yolks and vanilla extract, and mix on high until the mixture becomes pale and fluffy (1–2 minutes).
Mix in the cookie butter on medium-low speed until fully blended.
Gradually stir in the dry ingredients on low to medium-low speed until just combined.
Scoop dough into 2-tablespoon-sized balls and place 6 at a time on baking sheets, spacing 2 inches apart.
Bake for 10–11 minutes. Immediately press a Biscoff cookie into the center of each warm cookie.
Let rest on the baking sheet for 5 minutes before transferring to a wire rack to cool for 10–15 minutes.
Store in an airtight container for up to 3 days, or freeze for up to 2 weeks.
Notes
Make sure your egg yolks are at room temperature for better blending.
Don’t overmix after adding the dry ingredients to keep the cookies soft.
Pressing the Biscoff cookie in while warm helps it stick perfectly and adds a beautiful presentation.
Cookies can be made smaller or larger; adjust baking time accordingly.
