Description
This easy cream cheese chicken is ready in just 30 minutes and features a rich, creamy garlic herb sauce made from pantry staples. Perfect for weeknight dinners.
Ingredients
8 ounces cream cheese (softened, block style like Philly)
2 large chicken breasts (cut into 4 cutlets)
1/2 teaspoon garlic powder
Salt & pepper, to taste
1 tablespoon butter
1 tablespoon olive oil
1/2 medium onion, chopped
3 cloves garlic, minced
3/4 cup chicken broth
1/2 teaspoon Italian seasoning
1/4 teaspoon crushed red pepper flakes
Fresh chopped parsley (optional, to taste)
Instructions
Microwave cream cheese until very soft. Cut into smaller pieces and set aside.
Slice chicken breasts lengthwise to make 4 thin cutlets. Season with garlic powder, salt, and pepper.
In a large skillet, heat butter and olive oil over medium-high heat. Add chicken and sear for 5–6 minutes per side until golden and cooked through (internal temp 165°F). Remove and set aside.
Reduce heat to medium. Add chopped onion and sauté for 5–7 minutes until soft and lightly browned.
Stir in minced garlic and cook for 30 seconds.
Add chicken broth, cream cheese, Italian seasoning, and red pepper flakes. Stir until smooth (this may take a few minutes).
Return chicken to skillet and warm through in the sauce. Thin with a splash more broth if needed.
Season with additional salt and pepper if desired. Garnish with fresh parsley and serve immediately.
Notes
Cream cheese blends best when softened; avoid cold cream cheese straight from the fridge.
Add spinach or mushrooms for a veggie boost.
Pairs well with pasta, mashed potatoes, or rice to soak up the sauce.
