Description

These fresh peach fritters are crispy, golden, and bursting with juicy peaches. The perfect quick dessert or sweet breakfast treat in under 30 minutes.

Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1½ teaspoons baking powder

1/4 teaspoon salt

1/2 cup milk

1 large egg

1 teaspoon pure vanilla extract

1 cup diced fresh ripe peaches

Oil for frying (vegetable or canola)

Optional: powdered sugar or cinnamon-sugar for topping

Instructions

In a medium bowl, whisk together flour, sugar, baking powder, and salt.

In a separate bowl, whisk milk, egg, and vanilla extract until smooth.

Combine the wet and dry ingredients, stirring just until combined. Fold in diced peaches.

Heat 1–1½ inches of oil in a skillet or pot to 350°F (175°C).

Drop spoonfuls of batter (about 2 tbsp each) into the oil and fry in batches for 2–3 minutes per side until golden.

Remove with a slotted spoon and drain on paper towels.

Dust warm fritters with powdered sugar or cinnamon-sugar, and serve immediately.

Notes

Best enjoyed fresh and warm.

Try adding a pinch of nutmeg or cardamom for extra flavor.

Chopped pecans or a drizzle of glaze can elevate the presentation.
