Ingredients
Garlic Butter:
4 Tbsp unsalted butter, softened
2 cloves garlic, minced (or roasted garlic for a sweeter flavor)
1 Tbsp fresh parsley, chopped (optional: oregano or Italian seasoning)
2 Tbsp grated Parmesan or Pecorino Romano
Salt and pepper, to taste
Sandwich:
4 slices thick bread (Texas toast, sourdough, or French bread)
1 to 1½ cups melting cheese (Fontina, sharp cheddar, mozzarella, provolone, or Muenster)
Instructions
Make Garlic Butter: Combine softened butter with garlic, herbs, Parmesan, salt, and pepper in a bowl. Mix until smooth and spreadable.
Assemble Sandwiches: Spread garlic butter on one side of each bread slice. Layer cheese between two slices with buttered sides facing out.
Toast: Heat a nonstick skillet or griddle over medium-low. Place sandwiches in the pan and cook for ~4 minutes per side until golden and cheese is fully melted. Press gently with a spatula while cooking.
Serve: Let rest for 1 minute off the heat. Slice and enjoy!
Notes
Cover the pan briefly while toasting to help cheese melt without burning the bread.
