Description
A hearty one-pan dinner with juicy sirloin steak and crispy golden potatoes tossed in a flavorful garlic herb butter. Quick, easy, and perfect for a weeknight skillet meal.
Ingredients
1 1/2 lbs sirloin steak, cut into bite-sized cubes
1 1/2 lbs baby yellow potatoes, halved or quartered if large
4 tablespoons unsalted butter
1 tablespoon olive oil
6 cloves garlic, minced
1 teaspoon fresh thyme, chopped
1 teaspoon fresh rosemary, chopped
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Optional: red pepper flakes, for heat
Instructions
Place potatoes in a pot of salted water and bring to a boil. Cook for 10 minutes until just tender, drain and set aside.
Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Add cooked potatoes in a single layer, season with salt and pepper, and sauté 5–6 minutes until crispy. Transfer to a plate.
In the same skillet, sear steak bites in a single layer for 2–3 minutes per side, seasoning with salt and pepper.
Reduce heat to medium. Add remaining butter, garlic, thyme, and rosemary. Stir for 1 minute until fragrant.
Return potatoes to skillet, toss to coat in garlic butter, and cook for another 1–2 minutes.
Remove from heat, garnish with parsley and optional red pepper flakes. Serve immediately.
Notes
For a richer flavor, substitute sirloin with ribeye or New York strip.
Make it low-carb by using roasted cauliflower instead of potatoes.
Add mushrooms or onions during steak searing for more flavor.
Leftovers can be refrigerated for up to 3 days; reheat in a skillet for best texture.
