This flavorful chicken meatloaf is packed with garlic, Parmesan, and a cheesy mozzarella topping, making it a healthier and delicious option for dinner.
Ingredients
1½ lbs ground chicken
1 cup breadcrumbs (Italian-style or plain)
2 large eggs
½ cup grated Parmesan cheese
¼ cup milk
3 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon dried parsley
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon crushed red pepper flakes (optional)
¼ cup grated mozzarella (for topping)
Fresh parsley or basil (optional, for garnish)
Instructions
Preheat oven to 375°F (190°C). Grease or line a loaf pan with parchment paper.
In a large bowl, combine ground chicken, breadcrumbs, eggs, Parmesan, milk, garlic, onion powder, parsley, salt, pepper, and red pepper flakes if using. Mix gently until just combined.
Transfer mixture to prepared loaf pan and shape evenly.
Bake for 45–50 minutes or until internal temperature reaches 165°F (74°C).
In the last 5 minutes, sprinkle mozzarella on top and bake until melted and bubbly.
Let rest 5–10 minutes before slicing. Garnish with fresh herbs if desired.
Notes
Substitute ground chicken with turkey or lean beef.
Use almond flour or gluten-free breadcrumbs for low-carb or gluten-free versions.
Add sautéed onions, bell peppers, or spinach for extra flavor and nutrition.
Swap mozzarella for provolone or cheddar for a different cheese flavor.
