Description

Crispy on the outside and creamy on the inside, these fried goat cheese croquettes are a delicious appetizer topped with honey, walnuts, and almonds for the perfect bite.


Ingredients

3.5 oz (100g) goat cheese

1 tsp dried thyme

2 ½ tbsp all-purpose flour

1 egg, beaten

7 tbsp Panko bread crumbs

1 tbsp honey

½ tbsp walnuts, finely chopped

½ tbsp sliced almonds, finely chopped

Canola oil, for frying


Instructions

Line a small baking sheet or freezer-safe plate with parchment paper and set aside.

In a small bowl, mix goat cheese and thyme with a fork until evenly combined.

Roll the mixture into about 10 small balls (approx. 2 teaspoons each).

Set up a breading station with 3 bowls: one with flour, one with beaten egg, and one with Panko breadcrumbs.

Bread each croquette: dip into flour (shake off excess), coat in egg, then press into Panko breadcrumbs until fully coated. Place on the parchment-lined plate.

Freeze the croquettes for 20 minutes to prevent them from falling apart while frying.

Heat 1 inch of canola oil in a small deep frying pan to 350°F–365°F.

Fry croquettes in small batches for 45 seconds to 1 minute, turning to brown all sides. Remove with a slotted spoon and place on a serving plate.

Drizzle with honey, then sprinkle finely chopped walnuts and almonds over the top.

Let cool for a few minutes before serving. Enjoy!

Notes

Freezing is essential to maintain shape while frying.

Oil temperature matters: use a thermometer to ensure it’s between 350°F–365°F.

For a healthier version, shallow fry with a thin layer of oil and turn frequently—add 1–2 minutes cook time.
