Layered with chocolate pudding, mint whipped cream, and crushed Oreos and Andes, this grasshopper parfait is a cool and creamy dessert everyone loves.
Ingredients
15 OREO cookies, chopped (about 1½ cups)
ANDES chocolates, chopped
7.8 oz JELL-O Chocolate Instant Pudding (2 boxes of 3.9 oz)
4 cups cold milk
Green food coloring (to desired shade)
Mint flavoring (to taste)
2 cups thawed COOL WHIP or whipped cream
Additional Oreos and Andes for garnish
Instructions
Mix Crunchy Layer:
Combine chopped Oreos and Andes chocolates in a bowl. Set aside.
Prepare Pudding:
In a medium bowl, whisk together the chocolate pudding mix and cold milk. Let it stand for 5 minutes to thicken.
Make Mint Whipped Cream:
In a separate bowl, gently mix green food coloring and mint flavoring into the whipped topping until well blended.
Assemble Parfaits:
In cups or dessert glasses, layer chocolate pudding, mint whipped cream, and cookie/chocolate mixture.
Repeat layers as desired.
Garnish and Chill:
Top with a whole Oreo and a few chopped Andes mints.
Refrigerate for at least 30 minutes before serving. Enjoy!

Adjust mint flavoring to your taste—start with a few drops and build up.
You can substitute homemade whipped cream for COOL WHIP if desired.
