Description

This easy gyro recipe features yogurt-marinated chicken, crisp toppings, and tangy tzatziki sauce for a healthy and delicious meal ready in under 90 minutes.

Ingredients

For the Chicken Marinade:

lbs boneless, skinless chicken thighs or breasts

¾ cup Greek yogurt

2 tablespoons olive oil

2 tablespoons lemon juice

3 cloves garlic, minced

1½ teaspoons dried oregano

Salt and pepper, to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

½ cucumber, grated and squeezed dry

1 clove garlic, minced

1 tablespoon lemon juice

1 tablespoon olive oil

1 tablespoon fresh dill, chopped

Salt and pepper, to taste

For Serving:

4 pita breads, warmed

Sliced tomatoes

Sliced red onions

Shredded lettuce

Crumbled feta cheese (optional)

Instructions

Marinate the Chicken:
In a bowl, mix Greek yogurt, olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken, coat thoroughly, cover, and refrigerate for 30 minutes to 2 hours.

Make the Tzatziki Sauce:
Grate cucumber and squeeze out excess water. In a bowl, combine Greek yogurt, cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper. Mix well and refrigerate.

Cook the Chicken:
Heat grill or skillet over medium-high. Remove chicken from marinade, cook 5–7 minutes per side until golden and cooked through. Rest for 5 minutes, then slice.

Assemble the Gyros:
Warm pita bread. Add sliced chicken, toppings (tomatoes, onions, lettuce, feta), and spoon tzatziki over top. Fold and serve.

Notes

Marinate longer for more flavor, but 30 minutes is sufficient in a pinch.

For best results, cook chicken fresh just before serving.

Make tzatziki ahead and refrigerate for up to 3 days.
