Description
This Greek chicken is marinated in lemon, garlic, and oregano, then baked with crumbled feta for a simple, flavorful Mediterranean-inspired dinner.
Ingredients
4 boneless, skinless chicken breasts or thighs
¼ cup extra-virgin olive oil
Zest and juice of 1 lemon (≈¼ cup juice)
3 garlic cloves, minced
1 tablespoon fresh oregano or 1 teaspoon dried oregano
Kosher salt and freshly ground black pepper
½–1 cup crumbled feta cheese
Optional garnish: chopped fresh parsley and lemon wedges
Instructions
Whisk olive oil, lemon zest and juice, garlic, oregano, salt, and pepper to make the marinade.
Toss chicken in the marinade, cover, and refrigerate for at least 30 minutes or up to several hours.
Preheat oven to 350 °F (175 °C). Transfer chicken and marinade to a baking dish.
Cover with foil and bake for 30 minutes. Remove foil, top with feta, and bake uncovered for another 10–15 minutes until chicken reaches 165 °F and feta softens and browns slightly.
Garnish with parsley and a squeeze of lemon before serving.
Notes
Chicken thighs are a great alternative for extra moisture and flavor.
Try a sheet-pan variation with added vegetables like potatoes or tomatoes.
Feta brine can be used in the marinade for even juicier chicken.
