Description

Ingredients

1 cup all-purpose flour

2 teaspoons baking powder

1 cup plain, full-fat Greek yogurt

½ cup milk (dairy or non-dairy)

2 large eggs

1 teaspoon pure vanilla extract

Butter or oil, for cooking

Maple syrup, for serving


Instructions

Mix Dry Ingredients: In a large bowl, whisk together flour and baking powder until well combined.

Combine Wet Ingredients: In another bowl, whisk Greek yogurt, milk, eggs, and vanilla extract until smooth.

Make the Batter: Gently fold the wet ingredients into the dry mixture until just combined. Do not overmix; a few lumps are fine.

Heat the Griddle: Preheat a skillet or griddle over medium heat. Lightly grease with butter or oil.

Cook Pancakes: Pour about ¼ cup batter per pancake onto the hot surface. Cook until bubbles form on top, about 2–3 minutes, then flip and cook until golden brown on both sides.

Serve: Enjoy hot with maple syrup, berries, or your favorite pancake toppings.

 

Notes

For extra fluffiness, let the batter rest for 5 minutes before cooking.

These pancakes reheat well in the toaster for quick breakfasts.

You can swap half the flour with whole wheat for a nuttier flavor.
