Description
This creamy ground beef stroganoff is a quick and comforting classic made with tender beef, mushrooms, and a rich sour cream sauce. Perfect over noodles or rice for a cozy dinner.
Ingredients
1 lb lean ground beef
8 oz cremini mushrooms, sliced
1 medium yellow onion, diced
3 cloves garlic, minced
2 cups low-sodium beef broth
1 cup full-fat sour cream
2 tbsp Worcestershire sauce
8 oz egg noodles (or pasta of choice)
2 tbsp all-purpose flour
Salt and pepper, to taste
2 tsp olive oil
Instructions
Heat olive oil in a large skillet over medium heat. Add diced onion and garlic; sauté until soft and fragrant.
Increase heat to medium-high. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
Add mushrooms, Worcestershire sauce, salt, and pepper. Cook until mushrooms are softened.
Sprinkle flour over the beef mixture and stir well.
Gradually add beef broth, stirring constantly to create a smooth sauce. Bring to a simmer until it starts to bubble and thicken.
Reduce heat to low. Stir in sour cream until fully incorporated. Simmer for 5 more minutes until thick and creamy.
Toss with cooked egg noodles or serve the sauce over noodles, rice, or mashed potatoes.
Garnish with chopped parsley if desired.
Notes
For extra richness, add a splash of heavy cream.
Substitute Greek yogurt for sour cream for a lighter version.
Use ground turkey or chicken for a leaner twist.
Can be made ahead and reheated—just add a splash of broth or cream to loosen the sauce.
