Description

This hearty ground beef vegetable soup is packed with flavor and loaded with tender veggies—perfect for cozy dinners, meal prep, or freezing for later.


Ingredients

Olive oil

Ground beef

Onion, chopped

Garlic, minced

Carrots, diced

Potatoes, diced

Celery, sliced

Diced tomatoes (canned or fresh)

Beef broth

Dried basil

Dried oregano

Salt

Black pepper

Paprika

Green beans, chopped

Corn kernels (fresh, frozen, or canned)


Instructions

Heat olive oil in a large pot over medium heat.

Add onion and garlic; sauté until fragrant and translucent.

Add ground beef and cook until browned. Drain excess fat.

Stir in carrots, potatoes, and celery. Cook for 5 minutes.

Add diced tomatoes and beef broth.

Season with basil, oregano, salt, pepper, and paprika.

Bring to a boil, then reduce heat and simmer for about 30 minutes or until vegetables are tender.

Stir in green beans and corn; simmer for an additional 5–10 minutes.

Taste and adjust seasoning as needed. Serve warm.

Notes

For a spicier soup, add red pepper flakes or jalapeño.

Fresh herbs can be substituted for dried—use three times the amount.
