Description
This hearty hamburger soup is loaded with ground beef, potatoes, and vegetables in a rich broth—easy, comforting, and family-approved.
Ingredients
1 lb (450g) ground beef
1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
3 large carrots, peeled and diced
3 medium potatoes, peeled and diced
2 stalks celery, chopped
1 can (14.5 oz) diced tomatoes (with juice)
1½ cups beef broth
1 cup water
1½ tsp dried oregano
1 tsp ground cumin
1 tsp paprika
½ tsp black pepper
Salt, to taste
1 bay leaf
Fresh parsley or cilantro for garnish (optional)
Instructions
Prepare Ingredients: Dice all vegetables and mince garlic. Set aside.
Brown the Beef: In a large soup pot over medium heat, cook ground beef until browned (5–7 minutes). Drain excess fat if needed.
Sauté Aromatics: Add olive oil to the pot, followed by chopped onions. Sauté until translucent. Add garlic and cook for 30 seconds.
Add Vegetables: Stir in carrots, celery, and potatoes. Cook for 5 minutes, stirring occasionally.
Add Broth & Seasonings: Pour in diced tomatoes, beef broth, and water. Add oregano, cumin, paprika, black pepper, salt, and bay leaf. Stir well.
Simmer: Bring the soup to a boil, then reduce heat, cover, and simmer for 30–40 minutes until vegetables are tender.
Finish: Remove bay leaf. Taste and adjust seasoning.
Serve: Garnish with fresh parsley or cilantro and serve with crusty bread.
Notes
Add shredded cheddar for a cheesy twist.
Use ground turkey for a leaner version.
Stir in chopped cabbage or spinach for added nutrients.
Add pasta toward the end for a heartier soup.
