Description
This easy detox soup is loaded with fresh veggies, lean chicken, and zesty lemon for the ultimate clean eating comfort meal. Perfect for a cozy, healthy dinner.
Ingredients
2 tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
1 tsp fresh ginger, minced
1/2 cup bell peppers, diced
1 tsp Italian seasoning (optional)
1/4 tsp red pepper flakes (optional)
1 tsp sea salt
1/2 tsp black pepper
1 lb boneless skinless chicken breasts
6 cups reduced-sodium chicken broth
1 cup broccoli florets
1 cup cauliflower florets
2 tbsp lemon juice
Instructions
Heat olive oil in a Dutch oven over medium-high heat.
Add onion, garlic, and ginger. Sauté for 3–4 minutes until fragrant and translucent.
Stir in bell peppers, Italian seasoning, red pepper flakes, sea salt, and black pepper. Cook for another 3 minutes.
Add chicken breasts and chicken broth. Simmer for 20 minutes.
Remove chicken, shred with two forks, and return it to the pot.
Add broccoli and cauliflower florets. Simmer for another 10 minutes until vegetables are tender.
Remove from heat and stir in lemon juice before serving.
Notes
Serving size: 1 cup
You can swap in other vegetables like zucchini or spinach depending on what’s in season or what you have on hand.
Make it vegetarian by replacing chicken with chickpeas or tofu and using vegetable broth.
