Instructions
Melt butter in a large nonstick skillet over medium heat. Sauté diced onion until soft and fragrant.
Add frozen peas and carrots; cook until tender and heated through.
Push vegetables to one side, pour beaten eggs on the other side, and scramble until fully cooked.
Mix eggs and vegetables together, then stir in soy sauce.
Add cooked rice and stir until evenly coated and heated through.
