Description
This quick hibachi zucchini stir-fry is packed with flavor from garlic, soy, and sesame—perfect as a light, savory Japanese-inspired side dish.
Ingredients
2 medium zucchinis, sliced into half-moons
1 tablespoon sesame oil
1 tablespoon soy sauce (low sodium)
½ tablespoon teriyaki sauce
1 garlic clove, minced
¼ teaspoon ground ginger
¼ teaspoon black pepper
½ tablespoon butter (optional)
1 tablespoon chopped green onions (for garnish)
Sesame seeds (optional garnish)
Instructions
Heat sesame oil in a skillet or wok over medium-high heat.
Add garlic; sauté 30 seconds until fragrant.
Add zucchini and stir-fry 3–4 minutes until slightly softened.
Stir in soy sauce, teriyaki sauce, ginger, and black pepper. Cook 2 more minutes.
Add butter if using, and stir to melt.
Remove from heat. Garnish with green onions and sesame seeds.
Notes
Add mushrooms or bell peppers for variety.
Toss in red pepper flakes for heat or mirin for sweetness.
Use yellow squash or a mix of squash for color.
