Moist and healthy banana bread packed with protein from Greek yogurt and protein powder. Perfect for meal prep, breakfast, or a post-gym snack.
Ingredients
3 medium ripe bananas, mashed
2 large eggs
1/2 cup plain Greek yogurt (non-fat or 2%)
2 tbsp honey or pure maple syrup
1 tsp vanilla extract
1 cup oat flour (or blended rolled oats)
1/2 cup vanilla protein powder (whey or plant-based)
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
(Optional) 1/4 cup chopped walnuts, sugar-free chocolate chips, or hemp seeds
Instructions
Preheat oven to 175°C (350°F). Line a loaf pan with parchment paper.
In a large mixing bowl, mash the ripe bananas.
Add eggs, Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until smooth.
Stir in oat flour, protein powder, baking soda, cinnamon, and salt.
Gently fold until the batter is fully combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool completely before slicing and serving.
Notes
Use extra ripe bananas for maximum sweetness and moisture.
Both whey and plant-based protein powders work well—just avoid those with added sugars.
Optional mix-ins like nuts or sugar-free chocolate chips add texture and flavor.
This banana bread keeps well in the fridge for up to 5 days or can be frozen for up to 2 months.
